Method

  1. Knead the shortcrust pastry

    30 min
  2. Blind bake the pastry

Roll out the pastry, press it into a baking tray, prick it with a fork and bake in an oven at 180°C until partially baked.

    15 min
  3. Make the curd filling

Mix the curd cheese with the caster sugar, vanilla sugar, egg yolk and semolina.

    10 min
  4. Layering

Spread the curd filling over the partially baked pastry, then return it to the oven to bake through.

    15 min
  5. Meringue lattice

Whisk the egg whites with the icing sugar into a stiff meringue, pipe it into a piping bag, and press it over the top of the baked curd in a lattice pattern, then fill the gaps between the lattices with jam.

    5 min
  6. Finish baking

Bake the cake at a low temperature (130°C) until the meringue has set slightly and turned a light golden brown.
