Method
-
Base for the layers
Whisk the egg whites into a stiff foam, gradually adding the sugar as you go. Gently fold in the ground walnuts and the flour.
-
Baking the layers
Spread a thin round layer on a tray lined with baking paper. Bake at 180 degrees for about 10 minutes, until lightly golden. Make more layers in the same way.
10 min -
Making the cream
Warm the milk with the sugar and vanilla sugar. Mix the egg yolks with the flour until smooth, then pour into the hot milk and cook until thick. Leave to cool.
10 min -
Making the butter cream
Beat the room-temperature butter until light and fluffy, then gradually work in the cooled custard, a spoonful at a time, until silky and smooth.
5 min -
Assembling
Place the first layer on a plate, spread it with cream, then add the next layer. Stack all the layers this way, leaving the top layer free of cream.
-
Caramel topping
Cook the sugar with the water and lemon juice to a thick, golden-brown caramel, then quickly pour it over the top of the cake and spread evenly.
8 min -
Resting
Chill the cake in the fridge for at least a few hours so the layers come together and it is easier to slice.
