Method

  1. Prepare the yeast

In the lukewarm milk, activate the yeast with a pinch of sugar and a tablespoon of flour, then leave it in a warm place until it becomes frothy.

    10 min
  2. Knead the dough

Sift the remaining flour into a bowl, then add the eggs, sugar, salt and activated yeast, and finally the soft butter, and knead into a smooth, elastic dough.

  3. Prove

Cover the dough and leave it in a warm place until it has doubled in size.

    90 min
  4. Make the filling

Mash the curd cheese with a fork, then mix it with the soured cream, sugar, vanilla sugar, lemon zest and raisins.

  5. Shape and bake

Divide the dough into two pieces. Roll one half into a round, spread it with the curd cheese filling, then cover it with the other piece and press the edges together. Brush the top with egg yolk and bake in a 180°C oven for about 45 minutes.

    45 min
  6. Cool and serve

Leave the bread to cool, then serve it sliced. It is worth letting it stand for a little while, as this makes it easier to slice.
