Method
-
Potato and starter
Boil the potatoes in their skins until tender. Meanwhile, mix the flour with the yeast and the lukewarm milk, cover, and leave to rise in a warm place.
30 min -
The dough
Put the peeled, mashed, lukewarm potatoes into a bowl with both types of flour, the sugar, the honey and the lemon zest. Add the lightly beaten eggs and mix together.
-
Kneading
Add the starter, then the salt, and finally the softened butter, little by little. Knead (by machine, with the dough hook) until the dough is smooth and elastic and pulls away from the sides of the bowl.
-
Proving
Shape the dough into a ball on a surface greased with butter, cover, and leave to double in size.
120 min -
Shaping
Divide into pieces of about 60 g, roll into balls, flatten them slightly, then pierce the centres and widen them into rings. Place on baking paper, cover, and leave to prove again.
60 min -
Frying
Heat the oil to about 170 °C and fry the doughnuts on both sides until golden brown. Drain on kitchen paper, then toss in caster sugar while still warm.
