Method

  1. Dough base

Mix the flour, baking powder and a pinch of salt in a bowl. Add the cold, diced butter and rub it in with your fingertips until the mixture resembles sand.

  2. Cheese and sour cream

Add the grated Trappist cheese and the sour cream, then quickly bring everything together into a smooth dough. Do not overwork it, so the scones stay soft.

  3. Resting

Wrap the dough in cling film and chill it in the fridge for at least half an hour, so it is easier to roll out.

    30 min
  4. Shaping

On a floured surface, roll the dough to about half a centimetre thick, then cut out rounds with a glass or cutter. Re-roll the leftover dough as well.

    10 min
  5. Glazing

Whisk the egg with a fork and brush it over the scones. Sprinkle with sweet paprika and, if you like, a little grated cheese.

  6. Baking

Bake in a preheated oven at 180 degrees for about 15 to 20 minutes, until golden brown. Let them cool a little on a wire rack before serving.
