Method

  1. Prepare the lamb

Dice the lamb, then pour boiling water over it and leave it to stand briefly, so that the dirt and foamy residue wash off the surface. Pour off the water and dry the meat thoroughly.

    10 min
  2. Layer the base

In a large, heavy-bottomed pot, layer the meat, onion and carrot, seasoning carefully with salt and pepper as you go. Add the bay leaves and thyme too.

    10 min
  3. Start cooking

Pour over 1 litre of water so that the meat is just covered. Once it comes to the boil, cover the pot with a lid and reduce the heat to the minimum.

    60 min
  4. Add the potatoes

After an hour of cooking, stir the diced potatoes into the pot. Keep it covered and continue cooking until the potatoes and meat are both tender.

    45 min
  5. Season and serve

Taste, season with more salt and pepper if needed, then remove the bay leaves. Sprinkle with fresh, finely chopped parsley before serving.
