Saffron Milanese risotto

Risotto alla milanese · pronounced: riszotto ala milaneze

Milanese risotto is one of the best-known dishes of Lombardy. Its golden colour comes from saffron, and its creaminess from butter and cheese. It is cooked slowly, stirring constantly, so it requires patience and calm.
