Method
-
Make the dough
Mix the flour, half of the icing sugar, the vanilla sugar and the salt together. Rub in the chilled butter, then add the egg yolk and soured cream. Quickly bring together into a smooth dough, taking care not to overwork it.
10 min -
Rest
Wrap the dough in cling film and chill it in the fridge so the butter firms up. This makes it easier to shape and gives the biscuits a more crumbly texture.
60 min -
Shape the kifli
Roll the dough out to about 5 mm thick, then cut it into triangles or rectangles with a knife. Roll each piece up from the wide end into a crescent shape, and place on a baking tray lined with baking paper.
10 min -
Bake
Bake in a preheated oven at 180°C for about 12 to 14 minutes, until pale golden brown. Take care not to overbake them, as the pastry browns easily.
14 min -
Roll in icing sugar
Leave the kifli to cool slightly, while still warm but comfortable to handle. Then roll them in the remaining icing sugar, which you can mix with vanilla sugar.
-
Serve
Once completely cool, dust again with icing sugar and store in an airtight tin. They keep their flavour and softness for several days.
